MAKHANA (Fox Nut)
Description
Fox nut, or makhana, is the edible seed of the prickly water lily (Euryale ferox), not a true nut, harvested from wetlands, particularly in India. These puffed, white seeds are a popular, nutritious Indian snack and ingredient, known for being light, low in fat, rich in minerals (calcium, magnesium), protein, and fiber, and are used in both sweet dishes like kheer and savory snacks, often roasted with spices.
