Pine nuts are the edible, creamy, ivory-colored seeds harvested from the cones of pine trees (genus Pinus), not true botanical nuts, but delicious kernels rich in protein, healthy fats (omega-3s), vitamins, and minerals, prized in cooking for their buttery taste, especially in pesto, pasta dishes, and salads, with various species providing different flavors and sizes. They’re labor-intensive to collect and can be expensive, with the European stone pine (Pinus pinea) being a common source.
